What entomophagy really means, and why it's so challenging

It is commonly known that the concept of entomophagy provokes immediate and vehement responses from the general public, and from most scientists as well; the great majority of those responses tend toward the negative, at least among so-called "Western and Westernized" populations. Although the underpinning causes of those reactions are very poorly understood, recent interdisciplinary research illuminates some aspects of the problems. Discussion is encouraged.
