1534 Why hasn't mainstream academic entomology taken entomophagy seriously?

Upon approaching this subject without the lenses of an entomologist, the issues become very clear: insects are demonstrably and definitively the best way to feed an overcrowded planet, as they provide the greatest amount of nutrition and the smallest amount of environmental impact. Given this, why hasn’t mainstream academic Entomology (at least in so-called Western nations) taken entomophagy seriously? What does this subject and the extent to which our usual food-ways differ from it reveal about our connection to the Natural World? Surprisingly, we can demonstrate a burgeoning market for insect-based foods in many parts of the developed world, including Euro-American society.
