1540 A case study:  Gourmet insects for Western palates

A decade of insect banquets held at the Montreal Insectarium featured a great range of exotic species (at least in terms of culinary preparations) alongside what many consider the standard choices, meaning crickets and mealworms. Our institution has set a high standard for gourmet insect preparation within a so-called Western nation. Various data gleaned during those events both statistical and anecdotal demonstrate compelling evidence that such events hold the public's abiding interest. Indeed, edible insect events invariably indicate the public’s great responsivity to this subject.
